You can, of course, play Skyrim’s base game vanilla, never tempted by the expansive qualities of mods. However, doing so is to miss out on a huge part of what makes Bethesda’s legendary RPG such a rewarding experience.
Just look at ‘Assault on Valenwood’, a NexusMods offering that opens up a new region for you to hack and slash your way through. You can go rambling, but there’s a lot of enemies out for blood the moment you arrive, so it’s likely “there will be no sightseeing”.

Your character will need to be loaded up with potions, as its modder, theblackfist, advises. What is more, you should never stray too far away from your allies, lest you get lost. “It's very easy to get lost while exploring Valenwood. Southeast Valenwood especially is quite a maze, and even I, theblackfist, still get confused on where to go to get to one of the cities down there.”
